Tarte au Sucre

Ingredients
- 1 Uncooked Pie Crust
- 8 oz of Maple Syrup
- 8 oz of Corn Syrup
- 4 oz of Sugar
- 2 oz of Butter
- 1 oz of Real Vanilla
- 3 Eggs – Beaten
- Whipped Cream for Topping

Method
- Cook the syrups and sugar in a sauce pan to 240 F (softball)
- Remove from the heat
- Cool slightly, the add the beaten eggs and stir in
- Pour the mixture into the shell
- Bake at 400 F for 10 minutes, then reduce to 300 F and bake for another 35 minutes, until the blade of knife comes out clean
- Cool on a rack
- Top with whipped cream

Options
I like to add crushed nuts to this recipes, but I think that might be considered sacrilege by most French Canadians.

A pre-cooked pie crust from Whole Foods might work.
