Ingredients

  1. 1 Uncooked Pie Crust
  2. 8 oz of Maple Syrup
  3. 8 oz of Corn Syrup
  4. 4 oz of Sugar
  5. 2 oz of Butter
  6. 1 oz of Real Vanilla
  7. 3 Eggs – Beaten
  8. Whipped Cream for Topping

Method

  1. Cook the syrups and sugar in a sauce pan to 240 F (softball)
  2. Remove from the heat
  3. Cool slightly, the add the beaten eggs and stir in
  4. Pour the mixture into the shell
  5. Bake at 400 F for 10 minutes, then reduce to 300 F and bake for another 35 minutes, until the blade of knife comes out clean
  6. Cool on a rack
  7. Top with whipped cream

Options

I like to add crushed nuts to this recipes, but I think that might be considered sacrilege by most French Canadians.

Gluten-Free Option

A pre-cooked pie crust from Whole Foods might work.
