Old Fashioned Baked Beans

Ingredients
- 1-lb Navy beans - soaked overnight in one quart of cold water - don't drain
- 1-small or medium onion, sliced
- half tablespoon salt
- 2-teaspoons cider vinegar
- half teaspoon prepared mustard
- 1-tablespoon brown sugar
- quarter cup mild molasses
- half cup ketchup
- pinch of black pepper
- quarter lb bacon or salt pork
- hot water as needed

Method
- Pick and rinse beans
- Add cold water, cover, heat to boiling, simmer 30 minutes.
- Drain, keeping liquid. Place onion slices on bottom of casserole. Mix seasonings, and turn into pot.
- Add beans and hot liquid or water to cover.
- Arrange pork slices on top. Cover and bake in slow oven (250F) for three to four hours.
- Add a little water after an hour if you prefer more moisture in the beans.
- At the end of four hours, remove one cup of beans, mash and stir back into remaining beans carefully.
- Cover and continue to bake. Add liquid several times to keep, beans just covered.
- One hour before serving, remove cover to allow salt pork to brown.
