Ingredients

  1. 1-lb Navy beans - soaked overnight in one quart of cold water - don't drain
  2. 1-small or medium onion, sliced
  3. half tablespoon salt
  4. 2-teaspoons cider vinegar
  5. half teaspoon prepared mustard
  6. 1-tablespoon brown sugar
  7. quarter cup mild molasses
  8. half cup ketchup
  9. pinch of black pepper
  10. quarter lb bacon or salt pork
  11. hot water as needed

Method

  1. Pick and rinse beans
  2. Add cold water, cover, heat to boiling, simmer 30 minutes.
  3. Drain, keeping liquid. Place onion slices on bottom of casserole. Mix seasonings, and turn into pot.
  4. Add beans and hot liquid or water to cover.
  5. Arrange pork slices on top. Cover and bake in slow oven (250F) for three to four hours.
  6. Add a little water after an hour if you prefer more moisture in the beans.
  7. At the end of four hours, remove one cup of beans, mash and stir back into remaining beans carefully.
  8. Cover and continue to bake. Add liquid several times to keep, beans just covered.
  9. One hour before serving, remove cover to allow salt pork to brown.
