Hot Milk Sponge Cake

My grandma Winnifred taught me how to make this, I have since started using a microwave to warm the milk; but otherwize this recipe is unchanged.

Ingredients
- 3 Eggs
- 1 ¼ cups of Sugar
- 1 teaspoon of Vanilla
- 1½ cups of Flour
- 2¼ teaspoons of Baking Powder
- ¼ teaspoon of Salt
- ¾ cup of hot Milk

Method
- Preheat the oven to 350°F.
- Select an 8½” or 9” Tube Pan and make sure that is grease free.
- Beat the Eggs until thick and lemon coloured.
- The add 1 teaspoon of Vanilla.
- Blend or sift together the Flour, Baking Powder and Salt.
- Microwave the milk for 60 seconds.
- Gradually sift or sprinkle the dry ingredients over the egg mixture and fold in carefully after each addition.
- Then quickly fold in the Hot Milk.
- Pour into the pan and swirl a knife through the batter to remove any air bubbles.
- Bake in a preheated 350° F oven for about 50 minutes
- Invert the baked cake and allow it to hang suspended until cool. To remove from the pan, loosen with a knife or spatula and shake carefully.
