Banana Bread a la Angie

Ingredients

  1. 1 Stick of Butter (Room Temp)
  2. 2 Eggs
  3. ¾ Cup Sugar (¼ Cup Brown, ½ White)
  4. 1 Tbls Vanilla
  5. 1 Cup All Purpose Flour
  6. 1 Cup Whole Wheat Flour
  7. 1 Tsp Baking Soda
  8. ½ Tsp Salt
  9. 3 Over-ripe Bananas

Method

  1. Preheat oven to 350F
  2. Cream butter and sugar in stand mixer at medium speed
  3. Toss eggs and vanilla into butter and cream
  4. Sift all purpose flour, baking soda and salt
  5. Lower mixer speed to low
  6. Add bananas to mixture
  7. Add whole wheat flour to mixture
  8. Add any optional items (nuts, flax seed, etc...)
  9. Spray cooking spray into baking pans
  10. Scrape mixture into baking pans
  11. Bake for 50 to 60 mins -- do not over bake.
  12. Cool with dish towel over baking pan

Options

I like to add a little extra something different to my banana bread. You might want to try:

  1. crushed nuts
  2. flax seed
  3. shreaded coconut
